Pumpkin Chili

1 Tbsp. olive oil
1 medium onion, chopped
1 clove garlic, minced
1 (12oz) package soy crumbles (soy meat alternative similar to ground beef)
1 (15oz) can white kidney beans, drained and rinsed
1 (15oz) can low-sodium black beans, drained and rinsed
2 (15oz) cans no-salt added diced tomatoes
1 (15oz) can pumpkin
1 (4oz) can diced green chilies
1 Tbsp. cumin
1 Tbsp. chili powder
1 tsp. sugar
½ tsp. cinnamon
½ tsp. unsweetened cocoa
2 cups low-fat, low-sodium chicken broth or water

In a large saucepan or stockpot, sauté onion and garlic in olive oil over medium heat for 2-4 minutes. Add remaining ingredients and mix together. Bring to a boil and simmer on low for 1 hour. Makes 12 servings.
