1 pound lean ground buffalo
½ cup chopped onion
¾ cup low-sodium ketchup
1 Tbsp. white vinegar
1 Tbsp. fresh lemon juice
1 Tbsp. Worcestershire sauce
1 tsp. Dijon mustard
1 tsp. paprika
1 Tbsp. brown sugar
6 whole-wheat hamburger buns

In a large skillet, brown ground buffalo and onion over medium-high heat, stirring occasionally until meat is no longer pink (about 8 minutes). Add remaining ingredients, except the buns, (ketchup through brown sugar) to the meat mixture. Reduce heat to low and cook uncovered about 30 minutes or until thickened, stirring occasionally. Divide meat mixture evenly between the hamburger buns. Place mixture on the bottom bun and then place top bun on mixture to make a sandwich. Makes 6 sandwiches.

Lean ground beef, turkey or chicken can be substituted for the buffalo. Making your own sloppy joe sauce is a lower sodium alternative to prepared canned mixes, which contain 380-500mg sodium per ¼ cup.
