Basil Cranberry Spread

1/4 cup olive oil
3 Tbsp. chopped fresh basil
1½ tsp. minced garlic
12oz low-fat cream cheese
¼ cup plain low-fat yogurt
3 Tbsp. chopped fresh parsley
2/3 cup coarsely chopped walnuts
1 cup dried cranberries

In a small bowl, combine olive oil, basil and garlic. In a large bowl, beat cream cheese and yogurt with a mixer until smooth. Add oil mixture to cream cheese and blend well. Mix in parsley, walnuts and dried cranberries. Cover and chill in the refrigerator for 2 hours or overnight. This is best if prepared several hours in advance so the flavors can blend. Garnish with walnut halves, basil and dried cranberries. Serve with water crackers. Makes 3 2/3 cups.
